I love chocolate brownies and as a bonus they are so simple to bake. This recipe is even simpler. It’s from Donna Hay’s Fast, fresh, simple which was showing in the UK a few weeks back. The recipe is for standby brownies and is perfect when you need to make brownies quickly and you have no chocolate in the house. The resulting brownies are moist and delicious. Perhaps not quite as good as with the delicious pockets of melting chocolate you get in most recipes but delicious none the less.
I made this recipe exactly as it is shown below a month (no icing or decorations as seen in the above photo) or so back for my work colleagues and they went down a treat. For the party we were having over August bank holiday, I wanted to make them again but I wanted them to be a bit more special. I found the perfect solution in Leila Lindholm’s one more slice – rocky road brownies. Basically you make a fudge icing using double cream, milk, golden syrup and dark chocolate, pour it over the brownies, top with fudge pieces and mini marshmallow (you could add nuts too) & leave in the fridge to firm up before cutting in to pieces. Total chocolate decadence!
